Chilled Summer Soup
What to do, what to do with the handful of squash and cucumbers in your garden? I was in Atlanta one weekend and went to the farmer's market in my neighborhood. A fellow asked if I wanted a taste of cucumber soup; I was sure I did not. Cucumbers really aren't my cup of tea. However, the tasting cup was just a sip and to be polite, I took it. What a surprise! Though I could taste the cucumber, the flavor was a bit more full bodied and rich than I expected. When the farmer told me how it was made, I couldnt wait to make a batch for myself. I made a batch that afternoon, and took it to a gathering at the lake and it was a huge hit. I packaged individual servings in small jelly jars which I could cap and take in a cooler. Each jar had a spoon tucked into its decorative twine tie; and since we were on a boat, it took away the hassle of serving. It is so easy to make, and it's a delightful, and lovely, way to maximize the nutrients in vegetables because this soup is served raw. I've fine tuned it a bit to be more to my taste and have been selling (out) of the 8 pints I make every Friday night for my Saturday market.

Chilled Summer Soup:

2 cups homemade veggie broth. (I use this recipe to make mine, only I leave out the mushrooms.)
1/4 onion
1/2 cup of plain greek yogurt
1/2 cup of chopped cucumber
1/2 cup of chopped yellow or zucchini squash (I use a blend of both)
1/2 cup avocado
1 tbsp of extra-virgin olive oil
1 tbsp fresh squeezed lemon juice
1/2 tsp of fresh dill
1 clove garlic
*cayenne to taste: this is the critical ingredient that give the soup a kick of a finish
sea salt

this makes +/- 2 pints

Blend all of the above in a blender until smooth. Don't use a food processor or a Vitamix: it will destroy the texture. You want there to be a little bit of body to it. Chill for at least two hours. Serve with tiny dill sprig on top or a little swirl of yogurt. This raw soup is divine, and a beautiful first course for a summer dinner.

Great idea, with the jars and spoons. It's still not hot enough here for a chilled soup, but screw it, I'm making it! :-)

I've definitely gotta try this one! I do make gazpacho, which is a raw soup made with a tomato base, but this would be a lovely change.

It is hot and humid here this summer. I feel like I am living in Texas again, although I know this won't last as long as it does down South. We've hit over 100F with the humidity on quite a number of days so cooking just isn't a pleasant thing to do.

I don't think blenders give off much heat when operating, though! hehe

boxer: im in a book club now, and its made me think of clever ways to serve my dish in throw away little individual packages...so the hostess has nothing to wash or contribute.Little tiny mason jars are cute but expensive when you have a lot of people. You will love this soup.

Ponita: the humidity today is a little less than yesterday which was like walking thru fog all day. I took the dogs for a walk after 7 pm and they were panting so hard I was concerned. This soup is really good - i make gazpacho too, but I like this even better - and the cayenne heat makes the flavors sing.

lx: I understand! When i was at the brookhaven market a guy was giving out little samples of chilled cucumber soup and I was like talk to the hand buddy. But I ended up being persuaded and it was a pleasant surprise. trust me, everything I like tells me I wouldnt like this -but I do. Mine is more squash than cucumber and its almost kind of nutty. think of it as a green veggie shake! mmmm.

But your picture makes it look sooooo yummy that I just may have to make it anyway! lol
I will say that the jars & spoon idea is one I will be borrowing.

Scarlet: congratulations on your Haiku win. you deserved it! The smaller crystal looking jars are the perfect size for a single serving. I usually make some sort of label and screw that in with the cap - its a really pretty presentation.

Like Ponita, I make gazpacho...but I did already make some cuke soup--not wif' avocado tho! Wow, that sounds yummy. I drink it before dinner--Uncle is polite for three bites but that's his ;limit, so I jes' drink it like a cocktail a'fore dinner now.

I'se surprised the food nazis let ya sell soup at the FM since they ain't certified yore kitchen--or have they/

aunty: the food nazis dont know or they would say no. Its on ice, in a cooler. its like selling crack: psssst! wanna try some chilled summer soup? Im not going to do it anymore because Ive given out the recipe now - and i can return to a more sane friday night.

oh -book club? I never read the books! I go for the food and fellowship. They read...oh I dont even know.

dianne: i am well -weller than usual. Good garden, more art. I got off the computer this summer and rocked back in amazement at what Ive accomplished. I think of you often, and will be back on the blogs soon.

diana: i thought i would hate it - but I ended up loving it. the best thing about it is getting nutrients raw. I am trying to eat more food this way.

ardliar: funny you should mention that. Recently on Aunty's ether capacious blog we discussed what has happened to blogging. I agree- the time of Sparring K9 was the pinnacle for me - i looked forward to battling my haters (like you) and wrote about things that mattered to me. WHat i eventually learned was that it was a pointless exercise in futility, and though it was entertaining, no progress was made, certainly not in changing anyones point of view. I am glad I wrote the pieces I did as "Freya" and enjoyed writing the rappery. but better to put the vigilant dog nature to self preservation. The garden, the art, the mindset. I will admit though, it is an entertainment (albeit a sad one) to hear the dead silence from the coterie of libs who ragged on the conservative 9'er for years, and now have Obama, a death dealing imperialist; a war criminal, a banking errand boy, and a phony. oh, and, we did get our health care, which delivers the people by force of law into the gapping maws of the insurance companies. congratulations - you won.

as for 50 shades of grey - i will have no part in adding to the wealth of a 17th rate fanfic trash writer who rips off subpar teen vampire movies for content. I leave that to the frumpy empty headed slags you love to rip from the lofty perch of your loch cliff.

@Czar: I had a neighbor that made borscht every year for her Christmas party. I was the only person who imbibed. It was good, though. Really.

I once naively tried to shill several of my desserts to a local cafe that was gung ho on the idea. But when I found out about all the regulatory hoops I'd have to jump through, fuggedaboutit. And yet school groups are always out and about in the summer, dangling potential bits of warm, oozy e coli trap baked goods in front of our noses. Go figure.

LMAO! Gawd I love you...lol- I read your reply to Ardliar 3 times :) No one says anything quite like you do!

The soup looks wonderful- I will make it. Like you, I'm not a big fan of cold soups, but I have been surprised a few times by things I didn't think I would like only to find they were things I didn't want to ever go without. (coconut and shrimp being one of them, and thanks to you I tried it :)
